Big Mamma, owned by restaurateurs Victor Lugger and Tigrane Seydoux, opened its first U.K site in February on Great Eastern Street, Shoreditch. The mouth-watering menu at Gloria features a mixture of classic Italian dishes made from freshly sourced ingredients from all over Italy. Signature dishes on the menu include: ‘The 10 level lasagne’ and ‘Flippo’s meatballs’ – slow cooked meatballs in a San Marzaon tomato sauce served with spinach and pecorino. The cocktail menu has a range of classic cocktails but with a twist – starring the ‘Colada Me Later’ – a classic Pina Colada recipe that is served alight with flames.

Making a statement on Great Eastern Street

Spread across two floors, the inside of the 160-cover restaurant is decorated with mirrored ceilings, vibrant colours, plants and a central bar filled with hundreds and thousands of glowing bottles – inspired by Capri in the 1970’s, a small island off the bay of Naples. To fit in with the Shoreditch quirky and fun vibe, the exterior is painted bright yellow with plants and foliage growing up the front of the building.

Bespoke Canopy Hood

Our job was to install a complete Heating, Ventilation and Air Conditioning (HVAC) system to provide fresh and cool air throughout the restaurant. With limited space and low ceilings in the basement where the kitchen is located, a bespoke 6 x 2.6 x 400 metre Canopy Containment Air (CCA) hood manufactured in our factory and then installed on site by our specialist team. The bespoke canopy uses the latest energy-efficient air containment technology to reduce exhaust air flow rates and stops the spread of impurities and heat across the kitchen and restaurant.
