Brasserie of Light opened in late 2018 in Selfridges, one of London’s most prestigious department stores. For the first time in 109-years the department store is offering after-hours dining with a separate entrance to the restaurant via Duke Street – part of a £300 million investment from Selfridges.
The Art-Deco all-day brasserie offers a menu full of British classics and international-inspired dishes. Signature dishes include: spaghetti with lobster for main; Pegasus pie (yuzu coconut cloud, sesame biscuit, charred pineapple and caramel) for dessert; and ‘The Queen of Time’ cocktail – an English interpretation of a Kir Royale, made with gin and prosecco.

Architect Martin Brudnizki designed the restaurant which features bold and colourful light-filled interiors. At the centre of the restaurant is a 24ft crystal-encrusted statue of Pegasus, the famous winged horse in Greek Mythology, designed by artist Damien Hirst.
Chapman Ventilation had the pleasure of working on such a beautiful site. We installed the main air handling unit and extract fans in the kitchen and toilets in order to provide fresh and cool air throughout the restaurant spaces. Inside the kitchen, a 10-metre Canopy Containment Air (CCA) hood was installed. The canopy uses the latest energy-efficient air containment technology to minimise heat spillages from the canopy hood, reduces exhaust air flow rates and stops the spread of impurities and heat across the kitchen and restaurant. In 16 weeks, our work was complete and we handed over the site.
