Launched in October 2023 by Andy Oliver and Mark Dobbie, Kolae is named after the Southern Thai style of cooking that the restaurant is based upon. The technique consists of placing any variety of meat, fish or vegetable on a skewer, marinating it in a coconut curry sauce and then cooking it on an open flame.
The restaurant is housed in a former coach house in historical Borough Market, London. Despite the aged setting, the décor is modern with a large open kitchen and exposed brickwork.
Kolae is the sister restaurant to Som Saa, a traditional Thai restaurant and cocktail bar located in another equally trendy London market, Spitalfields.

Established in 1756, Borough Market is one of the oldest food markets in London. The market is steeped in history and has had quite a tumultuous past. However, it survived the arrival of supermarkets and is now utterly thriving. So much so that in 2021, customer demand led to Borough Market opening on Sundays.
Borough Market no longer acts as just a wholesale market. Today, it is a buzzing area containing a wide variety of food stalls and green grocers, surrounded by shops and bars and it attracts some of the top names in the restaurant sector.
Located in Southwark, South London, the area boasts some of the most famous attractions in London including The Shard, Shakespeare’s Globe and Tower Bridge.
The design of this restaurant was unique as it is a very old building that is long and narrow. We were innovative with the kitchen extract ductwork and ran it internally, whilst remaining observant of noise and odour restrictions.
Additionally, the particular cooking process that they use meant we required higher than normal extract rates and so we had to be creative with the internal location of the large kitchen extract fan! Our team worked together and solved this by relocating a toilet and creating a plant room to enable the flame grill cooking that Kolae is all about.
With these challenges conquered, the outcome was very satisfying as the project progressed successfully to its conclusion.
