The Ivy Collection opened its first site in the bustling city of Manchester in November 2018. Situated inside The Pavilion, the new Spinningfields site was the largest restaurant to open in the UK in 2018, with enough space to seat 535 diners, creating 279 full and part time jobs. The opulent new restaurant features four floors of dining including a new Asian restaurant and bar.
Housed in the striking, timber-framed Pavilion development, the venue includes a ground floor Ivy Brasserie, serving modern British dishes with a European slant such as truffled orzo, lobster linguine and slow-cooked lamb shoulder. It also offers an extensive drinks menu featuring beautifully-crafted cocktails. In the centre of the restaurant is a pink and gold Art-Deco style bar surrounded by colourful dining tables and booths.

On the first floor is The Dalton Room – a private dining room for up to twenty guests which can be booked for breakfast, lunch and dinner. The Dalton room is complete green seats, a large banqueting table and floor-to-ceiling glass walls for customers to enjoy the views that Spinningfields has to offer.
Located on the second floor is the Ivy Asia. The Ivy Asia, the latest concept from The Ivy Collection, offers a range of Asian inspired dishes including wagyu beef with truffle sauce and salmon teriyaki. The restaurant has green stone floors, a gold-gilt ceiling, Asian inspired furniture and an antique gold bar serving pan-Asian inspired cocktails. The private room called The Geisha Room accommodates up-to twenty guests and features a pink onyx bar, Asian inspired furnishings a gold leaf ceiling and bespoke mirrored artwork.
The Ivy have been a longstanding client of ours and we’ve helped the group open sites across the country. Fitting out the biggest site yet in Manchester had its challenges, but with our specialist knowledge and years of experience, we were able to overcome these. We fitted the four-storey restaurant with a full heating, ventilation and air conditioning (HVAC) system. A bespoke five-metre Canopy Containment Air (CCA) hood has been installed to minimise heat spillages, reduce exhaust air flow rates and stop the spread of impurities and heat across the restaurant. To ensure that the restaurant remains well ventilated, twenty-five air conditioning units were installed, along with Chapman Ventilation ductwork.
